Nitro are fully sapient rather than ordinary beasts. They can speak or otherwise communicate, create writing systems, construct cities, develop advanced technology, record recipes, and establish complex societies.

Behavior varies dramatically between groups. Some Nitro patiently observe humans to learn preparation techniques, while wild or subjugated Red Nitro can display extreme aggression.

Blue Nitro are much more calculating. They see themselves as Gourmet Nobility and operate according to ancient plans extending across enormous spans of time. Their priorities are generally tied to Gourmet Cells, planetary cultivation, Acacia's Full Course, and Neo rather than ordinary human morality.

The Blue Nitro have historically enslaved Red Nitro, crushing their vocal cords and using them as laborers. They also manipulate human populations and ecosystems in pursuit of ingredients, revealing a long history of exploitation behind their aristocratic self-image.

Nitro possess extraordinary strength, speed, durability, appetite, and biological adaptability. Even young or newly awakened individuals can pose major threats to experienced Gourmet Hunters.

Their greatest survival ability is cryptobiosis. A Nitro can reduce its metabolism to an extreme dormant state and survive without conventional food or water for centuries, allowing members of the species to endure catastrophes that wipe out other civilizations.

They can gain immense strength after consuming high-quality ingredients. Gourmet Cells are fundamental to their origin, and their biology responds dramatically when provided with sufficiently powerful food.

Some Nitro display remarkable mimicry. One individual reproduces Toriko's Nail Punch after observing it, indicating an ability to understand and imitate physical techniques with extraordinary speed.

Their bodies are also extremely difficult to cook or consume through ordinary methods. This durability reflects how completely Gourmet Cells are integrated into their physiology.

Blue Nitro operate at an even higher level and possess knowledge and technology associated with preparing Acacia's Full Course and cultivating entire planets.

Nitro are first foreshadowed through ruins, mysterious humanoid remains, and the design of GT Robos before living individuals become increasingly important.

Toriko and Komatsu encounter one of the ancient beings after exploring Vegetable Sky and later confront another inside the Gourmet Pyramid. These encounters establish that Nitro have existed around rare ingredients for extraordinary lengths of time.

The species becomes increasingly central once the story moves into Gourmet World. Their ancient records contain preparation information for ingredients that modern humans cannot understand independently.

The distinction between Red Nitro and Blue Nitro eventually exposes a much larger history involving planetary cultivation, Gourmet Cells, Acacia, Neo, and the preparation of Earth itself. The Blue Nitro have spent immense spans of time preparing worlds as sources of ingredients and Appetite Energy.

Individual Blue Nitro take names corresponding to courses from Acacia's Full Course, including PAIR, AIR, NEWS, EARTH, ATOM, ANOTHER, GOD, and CENTER, reflecting their assigned roles in the ancient plan.

Acacia studies Nitro centuries before the main story and receives critical information from them concerning GOD and Gourmet World.

Ichiryuu later oversees IGO research into Nitro and their connection to Gourmet World.
