Kinu Nakamozu

Kinu maintains a polite, professional manner when dealing with customers and business associates, but that composure masks considerable pride and a sharp temper. When challenged, her courteous façade can disappear quickly.

She is exceptionally confident in Mozuya's product. When Sōma and his companions openly investigate her karaage, Kinu willingly explains how it is prepared because she does not believe knowing the recipe will allow them to compete with her established business.

Her confidence becomes arrogance when she dismisses Eizan's warning that market conditions can change unexpectedly. She underestimates Sōma largely because she sees him as a child challenging a proven commercial operation.

Kinu is an experienced restaurateur specializing in karaage. Mozuya has developed a strong enough product and business model to expand throughout Kansai and win the All-Japan Karaage Convention three years consecutively.

Her strengths extend beyond food preparation into commercial strategy. Mozuya's station location allows the company to capture commuter traffic efficiently, and its brand recognition gives it an enormous advantage over the independent stores of Sumiredōri.

Kinu's weakness is an overreliance on the superiority of her existing product. Sōma recognizes that defeating Mozuya does not require reproducing its karaage; he instead designs a competing product specifically around the needs and strengths of the shopping district.

Kinu serves as the principal commercial opponent during the Karaage Wars. Mozuya opens near Sumire Town Station and begins drawing so much customer traffic that the older Sumiredōri Shopping District suffers a severe decline.

Sōma Yukihira, Ikumi Mito, Mayumi Kurase and the local merchants respond by developing the Sumire Karaage Roll. Instead of simply copying Mozuya, they create portable food designed for commuters and connect its popularity to the surrounding shops.

The strategy causes Mozuya's local sales to fall sharply, and Kinu ultimately acknowledges the effectiveness of Sōma's product and the shopping district's cooperative approach.

Etsuya Eizan acts as a business strategist for Mozuya and helps Kinu develop the operation's commercial success. Kinu addresses him respectfully in conversation but is confident enough to disregard his warnings when she believes he is being overly cautious.

Sōma Yukihira becomes Kinu's principal competitor during the Karaage Wars. She initially dismisses him but is forced to take his commercial and culinary instincts seriously.

Ikumi Mito assists Sōma in developing the Sumire Karaage Roll.

Mayumi Kurase participates in Sōma's effort as a taste tester and member of the local community.

Yūya Tomita represents the Sumiredōri Shopping District threatened by Mozuya's expansion.
